i'm looking for a possibility to define a 'gallery' custom field while uploading multiple pictures.
e.g. all pictures are taken at the same location and the uploading user has to give that information once, perhaps after that the custom field is added to all pictures of that specific upload.

You're welcome! You can create any custom fields you need, but they get reset after uploads (I don't think drop downs get reset, so if you're using a dropdown for your category field, you may be ok. On the front-end (not in Admin, which uses the WP uploader), users can upload 1 image at a time, but they don't have to keep coming back in the form after each one...just select the next image and upload.
At some point I may give an option for telling whether a field gets reset or not, but right now they automatically get reset...but dropdowns may be ok...not sure.
